During my time looking after a list of 50 sake's at Zuma Dubai, I gained my formal qualification as a Sake Sommelier. This enabled me to take the Sake program to a new level with training and expanding the Sake list significantly. Sake/Food matching became a new passion for me!

As Assistant Head Sommelier for this world renowned resort, I had a large job indeed. Between 4 restaurants, a bar, wine in the rooms and a large team we were kept busy ensuring that the resorts extremely high standards were kept up in the wine department. To take the wine program a step further we imported our own containers of wine direct from Europe.

This is a difficult qualification, with a pass rate of approximately 50%. I completed my Level 4 Diploma in 2013, with a view to becoming an Educator of the program here in Australia and progressing to my Masters.

As Head Sommelier for a season at Domaine des Andeols, then owned by Alain Ducasse, I was able to discover and showcase the wines of Provence on a daily basis with foods sourced from the hotel garden. Wine dinners, revolving degustation menu's and wine list improvement were all part of my responsibilities.
